Homemade Empanadas – one of our favourite Spanish snacks

Trying to brighten up this dreary, wet winter’s day with some homemade Empanadas. This tasty snack is the Spanish equivalent of a pasty and it makes the perfect quick, cheap, lunch whilst out sightseeing – the kids love them too. Baked or fried and filled with tuna, meat and vegetables, you’ll find them in bakeries all over Spain.

The recipe I used came from my brother-in-law whose father is Spanish so he’s tried a few but loves this one from Rick Stein. It’s made with bread dough and baked and filled with tuna, tomatoes and peppers so it tastes pretty healthy as well as being delicious.
